- 2 cups Brussels sprouts, halved
- 4 cloves fresh garlic, minced
- 2 tbsp lemon juice (freshly squeezed)
- 4 tbsp unsalted butter
- 2 tbsp extra virgin olive oil

Instructions
- Preheat oven to 400°F (200°C) and line a baking tray with parchment paper.
- In a bowl, toss Brussels sprouts with olive oil, salt, and pepper. Spread on the baking tray cut side down.
- Roast for 20-25 minutes until golden brown.
- Meanwhile, melt butter in a skillet over medium heat. Add minced garlic and cook for 1 minute until fragrant.
- Stir in lemon juice and add cod fillets. Cook for 4-5 minutes per side until opaque and flaking easily.
- Serve cod alongside roasted Brussels sprouts drizzled with garlic butter sauce.
