Description

A refreshing kale salad packed with nutrients and topped with a zesty citrus dressing and pomegranate seeds.


Ingredients

Scale
  • 4 cups kale leaves, chopped (about 1 bunch)
  • ¼ cup freshly squeezed orange juice
  • 2 tbsp freshly squeezed lemon juice
  • ½ cup pomegranate seeds (about 1 medium pomegranate)
  • ⅓ cup extra virgin olive oil
  • 1 tbsp honey or maple syrup
  • Salt and pepper to taste

Instructions

  1. Prepare the kale by removing tough stems and tearing leaves into bite-sized pieces. Rinse thoroughly and pat dry.
  2. In a mixing bowl, whisk together orange juice, lemon juice, honey or maple syrup, salt, pepper, and olive oil until well combined.
  3. Pour the dressing over the prepared kale in a large bowl. Toss gently until all leaves are evenly coated.
  4. Add pomegranate seeds and mix lightly to distribute without crushing them.
  5. Taste and adjust seasoning if necessary.
  6. Serve immediately or let sit for about 10 minutes for flavors to meld before serving at room temperature.

Notes

  • This salad can be made ahead of time; however, it is best served fresh.
  • Feel free to add other toppings such as nuts or seeds for added crunch.
