Description
A refreshing kale salad packed with nutrients and topped with a zesty citrus dressing and pomegranate seeds.
Ingredients

- 4 cups kale leaves, chopped (about 1 bunch)
- ¼ cup freshly squeezed orange juice
- 2 tbsp freshly squeezed lemon juice
- ½ cup pomegranate seeds (about 1 medium pomegranate)
- ⅓ cup extra virgin olive oil
- 1 tbsp honey or maple syrup
- Salt and pepper to taste
Instructions
- Prepare the kale by removing tough stems and tearing leaves into bite-sized pieces. Rinse thoroughly and pat dry.
- In a mixing bowl, whisk together orange juice, lemon juice, honey or maple syrup, salt, pepper, and olive oil until well combined.
- Pour the dressing over the prepared kale in a large bowl. Toss gently until all leaves are evenly coated.
- Add pomegranate seeds and mix lightly to distribute without crushing them.
- Taste and adjust seasoning if necessary.
- Serve immediately or let sit for about 10 minutes for flavors to meld before serving at room temperature.
Notes
- This salad can be made ahead of time; however, it is best served fresh.
- Feel free to add other toppings such as nuts or seeds for added crunch.
