Description

This delightful Ube Chocolate Lava Cake combines the richness of white chocolate with the unique flavor of ube.


Ingredients

  • 1 cup White Chocolate Chips
  • 1/2 cup Unsalted Butter
  • 2 large Eggs
  • 2 large Egg Yolks
  • 1/2 cup Granulated Sugar
  • 1/2 cup Ube Halaya (Ube Jam)
  • 1/4 cup All-Purpose Flour
  • 1/4 teaspoon Salt
  • 1 teaspoon Ube Extract
  • 4 scoops Vanilla Ice Cream (For serving)
  • Non-stick Spray or Butter (For greasing ramekins)

Instructions

  1. Preheat your oven to 425°F (218°C).
  2. In a microwave-safe bowl, combine white chocolate chips and unsalted butter. Microwave in 30-second intervals until smooth.
  3. Whisk together the large eggs, egg yolks, and granulated sugar until thickened and pale.
  4. Slowly pour the chocolate and butter mixture into the egg mixture while continuously whisking.
  5. Stir in ube halaya and ube extract until fully incorporated.
  6. Fold in the all-purpose flour and salt until just combined.
  7. Grease your ramekins with non-stick spray or butter and divide the batter evenly among them.
  8. Bake in the preheated oven for 11-12 minutes until edges are firm and centers are jiggly.
  9. Let the ramekins cool for 1-2 minutes, then invert onto plates.
  10. Serve immediately while warm, topped with a scoop of vanilla ice cream.
