This delightful Ube Chocolate Lava Cake combines the richness of white chocolate with the unique flavor of ube.

- 1 cup White Chocolate Chips
- 1/2 cup Unsalted Butter
- 2 large Eggs
- 2 large Egg Yolks
- 1/2 cup Granulated Sugar
- 1/2 cup Ube Halaya (Ube Jam)
- 1/4 cup All-Purpose Flour
- 1/4 teaspoon Salt
- 1 teaspoon Ube Extract
- 4 scoops Vanilla Ice Cream (For serving)
- Non-stick Spray or Butter (For greasing ramekins)
Instructions
- Preheat your oven to 425°F (218°C).
- In a microwave-safe bowl, combine white chocolate chips and unsalted butter. Microwave in 30-second intervals until smooth.
- Whisk together the large eggs, egg yolks, and granulated sugar until thickened and pale.
- Slowly pour the chocolate and butter mixture into the egg mixture while continuously whisking.
- Stir in ube halaya and ube extract until fully incorporated.
- Fold in the all-purpose flour and salt until just combined.
- Grease your ramekins with non-stick spray or butter and divide the batter evenly among them.
- Bake in the preheated oven for 11-12 minutes until edges are firm and centers are jiggly.
- Let the ramekins cool for 1-2 minutes, then invert onto plates.
- Serve immediately while warm, topped with a scoop of vanilla ice cream.
Notes
- White chocolate chips can be replaced with chopped white chocolate bars.
- Margarine can be used instead of unsalted butter, but adjust for flavor.
- Ube powder can be substituted for ube halaya.
- Gluten-free flour mix can be used as an alternative to all-purpose flour.
