Scallion Noodles with Fried Eggs

Description

A delicious and easy noodle dish featuring scallions and topped with fried eggs.


Ingredients

Scale
  • 1 bunch scallions
  • ½ cup olive oil
  • 1 tablespoon minced ginger
  • 1 tablespoon minced garlic
  • 1 Thai chile (minced)
  • 3 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • ½ tablespoon granulated sugar
  • ¼ teaspoon white pepper
  • 8 ounces thin noodles
  • 2 large fried eggs
  • chili flakes for garnish

Instructions

  1. Chop 1 bunch of scallions, keeping the whites and green tops separated. Heat oil in a large sauté pan over medium heat. Add the white parts of the green onions and reduce the heat to low. Continue to simmer for 5 minutes, stirring frequently.
  2. Add minced ginger, minced garlic, Thai chile, and the green tops of the scallions and simmer for another 3-4 minutes or until aromatic. Add soy sauce, rice vinegar, sugar, and white pepper, stirring to combine. Remove from heat and set aside.
  3. Cook noodles according to the directions on the package. Drain noodles.
  4. Add cooked noodles to the sauce, tossing to combine. Remove the noodles from heat and portion them into bowls. Top with fried eggs and chili flakes. Serve immediately.

Notes

  • This dish can be adjusted with more or less spice depending on your taste.
