Ingredients

- 2 cups Spinach
- 1 cup Ricotta Cheese
- 2 Green Onions
- 4 pieces Pizza Bases
- 4 large Eggs
- 1 cup Cherry Tomatoes
- 1 handful Fresh Basil
- 2 tablespoons Extra Virgin Olive Oil
- to taste Salt
- to taste Pepper
Instructions
- Preheat the oven to 220°C (200°C for fan-forced).
- Blanch the spinach by placing it in boiling water for 30 seconds, then immediately transfer to an ice bath. Drain and chop roughly.
- Combine the chopped spinach, ricotta cheese, and green onions in a medium bowl. Mix until well blended.
- Spread the spinach mixture evenly over the prepared pizza bases on greased baking trays.
- Crack two eggs on top of each pizza.
- Bake the pizzas for 12-15 minutes, or until the crust is golden and crispy.
- Scatter halved cherry tomatoes and fresh basil leaves over the baked pizzas.
- Drizzle with olive oil, season with salt and pepper, and serve warm.
