Description

A delicious pizza topped with fresh spinach, creamy ricotta, and vibrant cherry tomatoes.


Ingredients

Scale
  • 2 cups Spinach
  • 1 cup Ricotta Cheese
  • 2 Green Onions
  • 4 pieces Pizza Bases
  • 4 large Eggs
  • 1 cup Cherry Tomatoes
  • 1 handful Fresh Basil
  • 2 tablespoons Extra Virgin Olive Oil
  • to taste Salt
  • to taste Pepper

Instructions

  1. Preheat the oven to 220°C (200°C for fan-forced).
  2. Blanch the spinach by placing it in boiling water for 30 seconds, then immediately transfer to an ice bath. Drain and chop roughly.
  3. Combine the chopped spinach, ricotta cheese, and green onions in a medium bowl. Mix until well blended.
  4. Spread the spinach mixture evenly over the prepared pizza bases on greased baking trays.
  5. Crack two eggs on top of each pizza.
  6. Bake the pizzas for 12-15 minutes, or until the crust is golden and crispy.
  7. Scatter halved cherry tomatoes and fresh basil leaves over the baked pizzas.
  8. Drizzle with olive oil, season with salt and pepper, and serve warm.
