- 4 ripe plums – pitted and sliced
- 1/2 cup (100g) brown sugar
- 1/4 cup (60g) unsalted butter
- 1 cup (125g) all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda

- 1/2 cup (100g) granulated sugar
- 1/2 cup (120ml) milk
- 1/4 cup (60ml) vegetable oil
- 1 large egg
- 1 teaspoon vanilla extract
Instructions
- Preheat the oven: Begin by preheating your oven to 350°F (175°C). Grease a 9-inch round cake pan with butter or cooking spray.
- Prepare the plum topping: In a medium saucepan over medium heat, melt the butter. Once melted, add the brown sugar and stir until combined. Cook for about 2-3 minutes until the mixture is bubbly and slightly thickened. Remove from heat and pour the mixture into the prepared cake pan, spreading it evenly across the bottom.
- Arrange the plums: Place the sliced plums on top of the caramel mixture in a circular pattern, overlapping them slightly if desired.
- Mix the cake batter: In a large mixing bowl, whisk together the flour, baking powder, baking soda, and salt. In another bowl, combine the granulated sugar, milk, vegetable oil, egg, and vanilla extract. Mix until well combined. Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Do not overmix.
- Pour the batter: Carefully pour the cake batter over the arranged plums in the pan, spreading it evenly.
- Bake the cake: Place the cake in the preheated oven and bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
- Cool and invert: Once baked, remove the cake from the oven and allow it to cool in the pan for about 10 minutes. Then, carefully run a knife around the edges to loosen it. Place a serving plate over the top of the cake pan and quickly invert it, allowing the cake to fall onto the plate. Gently lift the pan off.
