- 2 cloves Garlic
- 1 medium Capsicum
- 1 teaspoon Smoked Paprika
- 6 large Eggs
- 0 cup Parmesan Cheese
- 2 tablespoons Parsley
Instructions
- Cook potato gems according to the package directions until crispy, cool slightly, and season lightly with salt and pepper.
- Heat olive oil in a frying pan; add chopped onions and minced garlic, cooking until golden brown—about 10 minutes.
- Stir in the diced capsicum and smoked paprika, cooking for an additional 2 minutes before removing from heat.
- Grease a 6-hole pie maker with oil, then place 4 potato gems in each hole, pressing them down.
- Spoon the cooled vegetable mixture into the center of each potato base, then carefully pour in the whisked eggs.
- Close the pie maker lid and cook for 10-12 minutes, or until the omelettes are puffed and golden brown.
- Use a palette knife to gently remove the mini omelettes and garnish with extra Parmesan and parsley.
Notes
- Potato gems can be prepared in advance and frozen for quick meals.
- Feel free to substitute ingredients based on personal preference, such as using cheddar in place of Parmesan for a different flavor.
