Description

Ingredients

  • 2 tablespoons Olive Oil
  • 1 medium Onion
  • 2 cloves Garlic
  • 1 medium Capsicum
  • 1 teaspoon Smoked Paprika
  • 6 large Eggs
  • 0 cup Parmesan Cheese
  • 2 tablespoons Parsley

Instructions

  1. Cook potato gems according to the package directions until crispy, cool slightly, and season lightly with salt and pepper.
  2. Heat olive oil in a frying pan; add chopped onions and minced garlic, cooking until golden brown—about 10 minutes.
  3. Stir in the diced capsicum and smoked paprika, cooking for an additional 2 minutes before removing from heat.
  4. Grease a 6-hole pie maker with oil, then place 4 potato gems in each hole, pressing them down.
  5. Spoon the cooled vegetable mixture into the center of each potato base, then carefully pour in the whisked eggs.
  6. Close the pie maker lid and cook for 10-12 minutes, or until the omelettes are puffed and golden brown.
  7. Use a palette knife to gently remove the mini omelettes and garnish with extra Parmesan and parsley.
