Ingredients

- 4 ears of corn on the cob
- 2 tablespoons smoked paprika
- 2 tablespoons olive oil
- 1 teaspoon kosher salt
- 1/2 teaspoon freshly cracked black pepper
- 2 tablespoons fresh lime juice
Instructions
- Husk the corn and cut each ear into quarters lengthwise.
- In a small bowl, whisk together olive oil, smoked paprika, salt, pepper, and lime juice.
- Generously brush the seasoning mix over each piece of corn.
- Preheat grill or oven to medium heat (400°F).
- Grill corn ribs for 15-20 minutes, turning occasionally until charred and golden brown.
- Let cool slightly before serving with extra lime wedges.
