Ingredients

  • 2 cups vegetable broth (low sodium)
  • 1 cup fresh spinach (packed)
  • 1 cup sliced mushrooms (cremini or shiitake)
  • 1 medium yellow onion (chopped)
  • 2 cloves garlic (minced)
  • 2 tbsp olive oil (extra virgin)
  • 1/2 cup freshly grated Parmesan cheese
  • 2 tbsp butter
  • Juice of 1/2 lemon
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Add chopped onions and minced garlic; sauté until soft, about 3-4 minutes.
  2. Add sliced mushrooms; cook until golden brown, approximately 5-6 minutes.
  3. Stir in Arborio rice, coating it well with the oil; toast for about 2 minutes until slightly translucent.
  4. Gradually add vegetable broth one ladle at a time, stirring continuously until most liquid is absorbed before adding more.
  5. When rice is nearly tender (15-18 minutes), fold in fresh spinach until wilted.
  6. Remove from heat and mix in butter, lemon juice, and freshly grated Parmesan for ultimate creaminess.
