Instructions
- In a bowl, whisk together flour, baking powder, and nutmeg.
- In another bowl, mix eggnog, milk, and eggs until smooth.
- Gradually combine wet and dry ingredients, mixing gently.
- Preheat a greased skillet over medium heat.
- Pour batter onto the skillet and cook until bubbles form (about 2-3 minutes), then flip to brown the other side.
- Serve warm with maple syrup.
Notes
- For a thicker batter, reduce the amount of milk.
- These pancakes can be kept warm in the oven while you finish cooking the rest.
