Description

A delicious lemon pie that’s perfect for any occasion.


Ingredients

  • 1 cup granulated sugar
  • 1/2 cup Bisquick or other baking mix
  • 4 large eggs
  • 1/4 cup unsalted butter, melted
  • 2 cups whole milk
  • 1 tablespoon lemon zest
  • 1/4 cup fresh lemon juice
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C). Set out a 9-inch pie dish.
  2. In a blender or bowl, combine sugar, Bisquick, eggs, butter, milk, lemon zest, lemon juice, vanilla, and salt. Blend or whisk until smooth.
  3. Pour the mixture into the pie dish.
  4. Bake for 45 to 50 minutes until the top is golden and the center is set with a slight jiggle.
  5. Cool at room temperature for 1 hour.
  6. Refrigerate for at least another hour before slicing and serving.
