A delicious lemon pie that’s perfect for any occasion.
Ingredients

- 1 cup granulated sugar
- 1/2 cup Bisquick or other baking mix
- 4 large eggs
- 1/4 cup unsalted butter, melted
- 2 cups whole milk
- 1 tablespoon lemon zest
- 1/4 cup fresh lemon juice
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
Instructions
- Preheat your oven to 350°F (175°C). Set out a 9-inch pie dish.
- In a blender or bowl, combine sugar, Bisquick, eggs, butter, milk, lemon zest, lemon juice, vanilla, and salt. Blend or whisk until smooth.
- Pour the mixture into the pie dish.
- Bake for 45 to 50 minutes until the top is golden and the center is set with a slight jiggle.
- Cool at room temperature for 1 hour.
- Refrigerate for at least another hour before slicing and serving.
Notes
- Let the pie chill completely for best texture before serving.
- Can be served with whipped cream or fresh berries for added flavor.
