Description

A simple and delicious recipe for microwave small potatoes tossed in a savory garlic and parsley dressing.


Ingredients

  • 1 ½ lbs small potatoes
  • 2 Tbsp olive oil
  • 2 garlic cloves (minced)
  • ⅓ cup chopped parsley
  • ½ tsp salt
  • ¼ tsp ground black pepper

Instructions

  1. Wash 1 ½ lb of small potatoes and slice off any unwanted pieces. Use a fork to prick the sides of the potatoes in multiple places.
  2. In a separate bowl, make the dressing by adding 2 Tbsp olive oil, 2 minced garlic cloves, ⅓ cup chopped parsley, ½ tsp salt, and ¼ tsp ground black pepper. Mix, and set aside.
  3. Place potatoes on a microwave-safe plate in a single layer and microwave for 9-11 minutes. Check doneness by poking the potatoes with a fork. Carefully remove the plate from the microwave using oven mitts (it will be hot).
  4. Toss potatoes with the dressing.
  5. Serve and enjoy!
