Delicious and healthy oatmeal cookies made with almond flour and sweetened with honey or maple syrup.

- 1 ½ cups rolled oats
- 1 cup almond flour
- ⅓ cup coconut oil (melted)
- ⅓ cup maple syrup or honey
- 1 large egg (or flax egg for vegan)
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- ½ teaspoon baking soda
- ¼ teaspoon salt
- ½ cup raisins
- ¼ cup chopped walnuts or dark chocolate chips (optional)
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, whisk together the melted coconut oil, maple syrup or honey, egg, and vanilla extract until smooth.
- Stir in almond flour, rolled oats, baking soda, salt, and cinnamon until a soft dough forms.
- Fold in raisins and any optional add-ins like nuts or chocolate chips.
- Scoop about 2 tablespoons of dough for each cookie onto the baking sheet and gently flatten each one.
- Bake for 10–12 minutes until the edges are golden brown.
- Let cookies cool on the baking sheet for 5 minutes before transferring to a wire rack.
Notes
- For a vegan option, use a flax egg instead of a regular egg.
- Store cookies in an airtight container for up to a week.
