Description
A delicious and hearty soup made with ground beef and mixed vegetables, perfect for a cozy meal.
Ingredients

- 1 pound ground beef (lean, can substitute ground chicken or turkey)
- 1 medium onion (diced)
- 3 medium cloves garlic (minced)
- 2 medium potatos (diced, any type of potato)
- 3 cups mixed vegetables
- 30 oz beef broth (the box)
- 28 oz diced tomatoes (including the juice)
- 2 tsp Worcestershire sauce (optional)
- 1 tsp oregano
- 1 tsp parsley
- 1 tsp basil
- salt and pepper to taste
Instructions
- Add oil to dutch oven (or large pot) and brown ground beef with chopped onions.
- Add garlic and stir for another couple of minutes.
- Add the rest of the ingredients and bring to an easy boil, then turn down to simmer (usually medium heat).
- Cook for approx. ½ hour, stir occasionally. Check to make sure potatos are tender.
- Serve in a bowl and garnish with freshly grated parmesan cheese and ground pepper if desired.
- If handy, add some fresh parsley as a garnish for color with fresh crusty rolls or a salad to round out the meal.
Notes
- If you have it, use Worcestershire sauce for added flavor.
- Feel free to customize the mixed vegetables to your preference.
- For a thicker soup, you can mash some of the potatoes after cooking.
