Hearty Beef Vegetable Soup

Description

A delicious and hearty soup made with ground beef and mixed vegetables, perfect for a cozy meal.


Ingredients

Scale
  • 1 pound ground beef (lean, can substitute ground chicken or turkey)
  • 1 medium onion (diced)
  • 3 medium cloves garlic (minced)
  • 2 medium potatos (diced, any type of potato)
  • 3 cups mixed vegetables
  • 30 oz beef broth (the box)
  • 28 oz diced tomatoes (including the juice)
  • 2 tsp Worcestershire sauce (optional)
  • 1 tsp oregano
  • 1 tsp parsley
  • 1 tsp basil
  • salt and pepper to taste

Instructions

  1. Add oil to dutch oven (or large pot) and brown ground beef with chopped onions.
  2. Add garlic and stir for another couple of minutes.
  3. Add the rest of the ingredients and bring to an easy boil, then turn down to simmer (usually medium heat).
  4. Cook for approx. ½ hour, stir occasionally. Check to make sure potatos are tender.
  5. Serve in a bowl and garnish with freshly grated parmesan cheese and ground pepper if desired.
  6. If handy, add some fresh parsley as a garnish for color with fresh crusty rolls or a salad to round out the meal.

Notes

  • If you have it, use Worcestershire sauce for added flavor.
  • Feel free to customize the mixed vegetables to your preference.
  • For a thicker soup, you can mash some of the potatoes after cooking.
