- 2 cups fresh baby spinach

- 2 tbsp olive oil
Instructions
- Preheat oven to 375°F (190°C) and heat olive oil in a skillet over medium heat.
- Sauté chopped onions and bell peppers until softened (about 5-7 minutes).
- Add fresh spinach, salt, and pepper; cook until spinach wilts (2-3 minutes).
- In a bowl, whisk eggs until frothy and mix in shredded cheddar.
- Pour the egg mixture over sautéed veggies and stir gently.
- Bake in the preheated oven for 20-25 minutes until golden brown and firm.
