Ingredients

- 2 cups chickpeas, soaked overnight
- 1 cup diced tomatoes
- 1/2 cup chopped onion
- 3 cloves garlic, minced
- 1/4 cup olive oil
- 1 tablespoon oregano
- 1 teaspoon cumin
- Salt and pepper to taste
- 2 cups spinach
- Feta cheese for topping
Instructions
- Drain and rinse the soaked chickpeas.
- Add chickpeas, diced tomatoes, onion, garlic, olive oil, oregano, cumin, salt, and pepper to the crockpot.
- Stir well to combine all ingredients.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours.
- In the last 30 minutes, add spinach to the crockpot and stir.
- Serve topped with feta cheese.
