Description

A hearty and nutritious dish made with chickpeas, spinach, and a blend of spices, cooked to perfection in a crockpot.


Ingredients

  • 2 cups chickpeas, soaked overnight
  • 1 cup diced tomatoes
  • 1/2 cup chopped onion
  • 3 cloves garlic, minced
  • 1/4 cup olive oil
  • 1 tablespoon oregano
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 2 cups spinach
  • Feta cheese for topping

Instructions

  1. Drain and rinse the soaked chickpeas.
  2. Add chickpeas, diced tomatoes, onion, garlic, olive oil, oregano, cumin, salt, and pepper to the crockpot.
  3. Stir well to combine all ingredients.
  4. Cover and cook on low for 6-8 hours or on high for 3-4 hours.
  5. In the last 30 minutes, add spinach to the crockpot and stir.
  6. Serve topped with feta cheese.
