Description

A creamy rice pudding made with short grain rice and whole milk, perfect for dessert.


Ingredients

Scale
  • 1 cup short grain rice
  • 4 cups whole milk
  • 1/2 cup sugar
  • 1/4 teaspoon salt
  • 2 tablespoons butter
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/3 cup raisins (optional)

Instructions

  1. Rinse the rice under cold water until mostly clear then set aside to remove excess starch.
  2. In a heavy saucepan add rice and 3 cups milk then cook over medium heat while stirring often to prevent sticking.
  3. Once steaming reduce heat to low and simmer for 20 minutes stirring regularly until rice softens.
  4. Add sugar and salt then slowly stir in remaining milk to control thickness and cook 10 more minutes.
  5. Remove from heat then stir in butter, vanilla, cinnamon and raisins if using, then rest 5 minutes before serving.

Notes

  • This dish can be served warm or chilled.
  • Adjust sugar to taste if you prefer a sweeter pudding.
