Description
A creamy rice pudding made with short grain rice and whole milk, perfect for dessert.
Ingredients

- 1 cup short grain rice
- 4 cups whole milk
- 1/2 cup sugar
- 1/4 teaspoon salt
- 2 tablespoons butter
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon
- 1/3 cup raisins (optional)
Instructions
- Rinse the rice under cold water until mostly clear then set aside to remove excess starch.
- In a heavy saucepan add rice and 3 cups milk then cook over medium heat while stirring often to prevent sticking.
- Once steaming reduce heat to low and simmer for 20 minutes stirring regularly until rice softens.
- Add sugar and salt then slowly stir in remaining milk to control thickness and cook 10 more minutes.
- Remove from heat then stir in butter, vanilla, cinnamon and raisins if using, then rest 5 minutes before serving.
Notes
- This dish can be served warm or chilled.
- Adjust sugar to taste if you prefer a sweeter pudding.
