Description

A classic potato salad with creamy dressing that is perfect for picnics and gatherings.


Ingredients

  • 2 lbs Yukon Gold or red potatoes
  • 1 cup mayonnaise
  • 2 tbsp yellow mustard
  • 1 cup chopped celery
  • ½ cup finely chopped red onion
  • ½ cup diced dill pickles
  • Salt and pepper to taste

Instructions

  1. Boil the Potatoes: Wash and place the potatoes in a pot covered with cold salted water. Bring to a boil and cook for 15-20 minutes until fork-tender. Drain and let cool.
  2. Cool and Chop: Once cool, chop the potatoes into bite-sized pieces.
  3. Mix the Dressing: In a bowl, combine mayonnaise, mustard, salt, pepper, diced pickles, celery, and onion.
  4. Combine Everything: Gently fold the warm potato chunks into the dressing mixture until coated.
  5. Chill: Refrigerate for at least an hour before serving to allow flavors to meld.
  6. Serve: Stir gently before serving. Enjoy!
