Description

This rich and moist chocolate coffee cake is perfect for dessert or a sweet treat anytime!


Ingredients

  • 1 ½ cups granulated sugar
  • ¾ cup unsweetened cocoa powder
  • 1 cup brewed coffee (cooled)
  • ½ cup vegetable oil
  • 2 large eggs
  • 1 tablespoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 2 teaspoons vanilla extract
  • ½ cup semi-sweet chocolate chips (optional)
  • Powdered sugar for dusting (optional)

Instructions

  1. Begin by preheating your oven to 350°F (175°C). Grease and flour a 9×13-inch baking pan or two 9-inch round cake pans.
  2. In a mixing bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt until well combined.
  3. In another bowl, combine the brewed coffee, vegetable oil, eggs, and vanilla extract. Whisk until smooth.
  4. Gradually pour the wet ingredients into the dry mixture, stirring gently until just combined. Avoid overmixing to keep the cake tender.
  5. If desired, fold in the semi-sweet chocolate chips for added richness.
  6. Transfer the batter into the prepared baking pan(s), spreading it evenly.
  7. Place in the preheated oven and bake for 40-45 minutes if using a round cake pan, or 30-35 minutes for a rectangular pan. Check doneness by inserting a toothpick into the center; it should come out clean.
  8. Remove from the oven and let the cake cool in the pan for about 20 minutes. Then, transfer it to a wire rack to cool completely.
  9. If desired, you can frost the cake with your favorite chocolate frosting or serve it plain with a sprinkle of powdered sugar.
  10. Once the cake is completely cool, slice it and prepare for serving.
