Description

Delicious chicken kofta with fresh herbs and spices.


Ingredients

  • 1 pound ground chicken
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • ½ teaspoon ground paprika
  • ½ teaspoon ground allspice
  • ¼ teaspoon cayenne pepper (optional for heat)
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon fresh mint, chopped
  • Salt and pepper to taste
  • 1 cup plain yogurt
  • 2 tablespoons lemon juice
  • 1 clove garlic, minced (for the sauce)
  • Olive oil (for grilling or baking)

Instructions

  1. In a large bowl, combine the ground chicken, chopped onion, minced garlic, cumin, coriander, paprika, allspice, cayenne pepper, parsley, mint, salt, and pepper. Mix until well combined.
  2. Shape the mixture into elongated patties or sausage shapes, about 4-5 inches long. Place them on a parchment-lined tray or plate.
  3. For a firmer texture, refrigerate the koftas for about 15 minutes. This helps them hold their shape while cooking.
  4. Preheat a grill or skillet over medium-high heat and lightly oil the surface. Cook the koftas for 5-7 minutes on each side until browned and cooked through (internal temperature should reach 165°F or 74°C).
  5. In a bowl, combine the plain yogurt, lemon juice, minced garlic, salt, and pepper. Stir well until smooth and creamy.
