Ingredients

- 1 pound ground chicken
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- ½ teaspoon ground paprika
- ½ teaspoon ground allspice
- ¼ teaspoon cayenne pepper (optional for heat)
- 2 tablespoons fresh parsley, chopped
- 1 tablespoon fresh mint, chopped
- Salt and pepper to taste
- 1 cup plain yogurt
- 2 tablespoons lemon juice
- 1 clove garlic, minced (for the sauce)
- Olive oil (for grilling or baking)
Instructions
- In a large bowl, combine the ground chicken, chopped onion, minced garlic, cumin, coriander, paprika, allspice, cayenne pepper, parsley, mint, salt, and pepper. Mix until well combined.
- Shape the mixture into elongated patties or sausage shapes, about 4-5 inches long. Place them on a parchment-lined tray or plate.
- For a firmer texture, refrigerate the koftas for about 15 minutes. This helps them hold their shape while cooking.
- Preheat a grill or skillet over medium-high heat and lightly oil the surface. Cook the koftas for 5-7 minutes on each side until browned and cooked through (internal temperature should reach 165°F or 74°C).
- In a bowl, combine the plain yogurt, lemon juice, minced garlic, salt, and pepper. Stir well until smooth and creamy.

- Serve with pita bread or salad for a complete meal.
