- 3 large ripe bananas (about 450g)
- 1 ½ cups all-purpose flour (190g)
- 1 cup granulated sugar (200g)
- ½ tsp baking soda
- ½ cup unsalted butter, melted (113g)
- 2 large eggs
- 2 tsp vanilla extract
Instructions
- Preheat the oven to 350°F (175°C) and grease a standard loaf or round cake pan.
- In a mixing bowl, mash the ripe bananas until smooth.
- Stir in the melted butter, then add sugar, eggs, and vanilla extract until well blended.
- In another bowl, whisk together flour and baking soda. Gradually fold this into the wet ingredients until just combined.
- Pour the batter into the prepared pan and bake for 50-60 minutes or until a toothpick inserted in the center comes out clean.
- Allow cooling for ten minutes in the pan before transferring to a wire rack.
