Description

A delicious and healthy dish featuring cod fillets baked in a coconut lemon sauce.


Ingredients

  • 4 fillets cod (about 6 ounces each)
  • 1 can (14 ounces) coconut milk
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 lemon (zested and juiced)
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 tablespoon fresh cilantro, chopped (for garnish)
  • 1 tablespoon cornstarch (optional, for a thicker sauce)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a medium saucepan, heat olive oil over medium heat. Add the chopped onion and cook until translucent, about 5 minutes.
  3. Stir in the minced garlic and grated ginger, cooking for an additional minute until fragrant.
  4. Pour in the coconut milk, lemon zest, and lemon juice. Bring to a simmer, seasoning with salt and pepper.
  5. If you prefer a thicker sauce, dissolve cornstarch in a tablespoon of water and stir it into the sauce. Simmer for a few more minutes until thickened.
  6. Place the cod fillets in a baking dish. Pour the coconut lemon sauce evenly over the fish.
  7. Bake in the preheated oven for 20-25 minutes, or until the cod is cooked through and flakes easily with a fork.
  8. Remove from the oven and sprinkle chopped cilantro over the fillets just before serving.
  9. Enjoy your dish warm with sides of your choice!
