- 4 fillets cod (about 6 ounces each)
- 1 can (14 ounces) coconut milk
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 1 lemon (zested and juiced)
- 2 tablespoons olive oil
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 tablespoon fresh cilantro, chopped (for garnish)
- 1 tablespoon cornstarch (optional, for a thicker sauce)
Instructions
- Preheat your oven to 400°F (200°C).
- In a medium saucepan, heat olive oil over medium heat. Add the chopped onion and cook until translucent, about 5 minutes.
- Stir in the minced garlic and grated ginger, cooking for an additional minute until fragrant.
- Pour in the coconut milk, lemon zest, and lemon juice. Bring to a simmer, seasoning with salt and pepper.
- If you prefer a thicker sauce, dissolve cornstarch in a tablespoon of water and stir it into the sauce. Simmer for a few more minutes until thickened.
- Place the cod fillets in a baking dish. Pour the coconut lemon sauce evenly over the fish.
- Bake in the preheated oven for 20-25 minutes, or until the cod is cooked through and flakes easily with a fork.
- Remove from the oven and sprinkle chopped cilantro over the fillets just before serving.
- Enjoy your dish warm with sides of your choice!
