Description
A comforting and flavorful chicken noodle soup with a hint of ginger and garlic.
Ingredients
Scale
- 2 tablespoons olive oil
- 1 medium onion, finely chopped
- 4 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 2 carrots, sliced
- 2 celery stalks, sliced
- 2 boneless, skinless chicken breasts
- 6 cups chicken broth
- 2 cups water
- 2 cups egg noodles
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 tablespoon fresh lemon juice
- 2 tablespoons fresh parsley, chopped
Instructions
- Build the flavor base olive oil in a large pot over medium heat. Add the chopped onion and cook until soft and translucent, about 3–4 minutes. Stir in the garlic and freshly grated ginger. Let them cook for about 30 seconds, just until fragrant. This is the moment your kitchen starts to smell incredible.
- Add the vegetables in the sliced carrots and celery. Stir and cook for another 3–4 minutes. These vegetables create the backbone of the soup’s comforting texture.
- Simmer the chicken the chicken breasts into the pot. Pour in the chicken broth and water. Bring everything to a gentle boil, then reduce the heat and let it simmer for about 20 minutes. The chicken will become tender and soak up all that aromatic flavor.
- Remove the chicken and shred it with two forks. Return the shredded chicken to the pot. This step always feels satisfying, seeing the soup come together into something hearty and complete.
- Add the noodles in the egg noodles and cook according to package instructions, usually 6–8 minutes, until tender.
- Finish with brightness with salt and pepper. Stir in fresh lemon juice and chopped parsley just before serving. The lemon lifts the flavors and enhances the ginger garlic broth beautifully.
- Serve your Ginger Garlic Chicken Noodle Soup hot, with steam rising from the bowl and perhaps a slice of warm bread on the side.
Notes
- This soup can be made ahead of time and stored in the refrigerator for up to 3 days.
- For a vegetarian version, substitute the chicken with tofu and use vegetable broth.
