A delicious zucchini apple bread that’s moist and flavorful, perfect for any occasion.

- 1 1/2 cups all-purpose flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/2 cup granulated sugar
- 1/2 cup brown sugar, packed
- 2 large eggs
- 1/2 cup vegetable oil
- 1 teaspoon vanilla extract
- 1 cup shredded zucchini (moisture squeezed out)
- 3/4 cup finely chopped or shredded apple
- 1/4 cup unsalted butter
- 1/2 cup brown sugar, packed
- 2 tablespoons milk
- 1/2 teaspoon vanilla extract
- 1/2 to 3/4 cup powdered sugar
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan. Optionally line with parchment paper for easier removal.
- In a medium bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
- In a separate large bowl, whisk the eggs, granulated sugar, brown sugar, oil, and vanilla extract until well combined.
- Fold in the shredded zucchini and chopped apple until evenly incorporated.
- Gradually add the dry mixture to the wet mixture and stir just until combined. Do not overmix.
- Pour the batter into the prepared loaf pan, smoothing the top.
- Bake for 50–60 minutes, or until a toothpick inserted into the center comes out clean. Cool in the pan for 10 minutes, then transfer to a wire rack.
- While the bread cools, make the frosting: In a small saucepan, melt butter and brown sugar over medium heat for 2–3 minutes, stirring continuously.
- Add milk and vanilla, then remove from heat. Let cool slightly and whisk in powdered sugar until thick and spreadable.
- Once the loaf is completely cooled, spread the frosting generously on top and let it set before slicing.
Notes
- This bread is best enjoyed fresh, but can be stored in an airtight container for up to 3 days.
- For a richer flavor, use brown butter in the frosting.
