- 4 medium flour tortillas
- 1 tablespoon butter (for cooking)
- Powdered sugar (optional, for serving)
Instructions
- Start by preparing the apple filling. Melt butter in a skillet over medium heat, then add the diced apples, brown sugar, and cinnamon. Stir occasionally and let them cook until tender and slightly caramelized, about 5–7 minutes.
- While the apples cook, mix the cream cheese, granulated sugar, and vanilla extract in a small bowl. Stir until smooth and creamy.
- Once your apples are ready, set them aside and begin assembling the quesadillas. Spread a layer of the cream cheese mixture over half of each tortilla, then spoon the warm apple filling on top. Fold the tortillas in half, pressing gently.
- In a clean skillet, melt a bit of butter over medium heat. Cook each quesadilla until golden brown on both sides and slightly crisp, about 2–3 minutes per side.
- Slice into wedges and, if you like, dust with powdered sugar. Serve immediately while everything is still warm and soft.
