  • 4 ounces cream cheese, softened
  • 2 tablespoons granulated sugar
  • 1/2 teaspoon vanilla extract
  • 4 medium flour tortillas
  • 1 tablespoon butter (for cooking)
  • Powdered sugar (optional, for serving)

Instructions

  1. Start by preparing the apple filling. Melt butter in a skillet over medium heat, then add the diced apples, brown sugar, and cinnamon. Stir occasionally and let them cook until tender and slightly caramelized, about 5–7 minutes.
  2. While the apples cook, mix the cream cheese, granulated sugar, and vanilla extract in a small bowl. Stir until smooth and creamy.
  3. Once your apples are ready, set them aside and begin assembling the quesadillas. Spread a layer of the cream cheese mixture over half of each tortilla, then spoon the warm apple filling on top. Fold the tortillas in half, pressing gently.
  4. In a clean skillet, melt a bit of butter over medium heat. Cook each quesadilla until golden brown on both sides and slightly crisp, about 2–3 minutes per side.
  5. Slice into wedges and, if you like, dust with powdered sugar. Serve immediately while everything is still warm and soft.
