Description

A refreshing blend of tomatillos and avocado perfect for dipping.


Ingredients

Scale
  • 1 medium avocado, peeled and pitted
  • 5 medium tomatillos, husked, rinsed and quartered
  • 1 medium jalapeño, roughly chopped
  • ½ medium white onion
  • 2 garlic cloves, sliced
  • ½ cup packed cilantro leaves
  • 1 tablespoon freshly squeezed lime juice
  • 1 teaspoon kosher salt

Instructions

  1. Add the avocado, tomatillos, jalapeño, onion, garlic, cilantro and lime juice to a blender or food processor.
  2. Purée until the mixture is smooth.
  3. Season with salt.
  4. Use or store refrigerated in an airtight container for up to 1 week.

Notes

  • Store leftovers for up to a week in the refrigerator.
  • Great with tortilla chips or as a topping for tacos.
