Description

A creamy and hearty slow cooker chicken tortellini recipe that is pure comfort in a bowl.


Ingredients

  • 1 ½ pounds boneless, skinless chicken breasts
  • 1 (20 oz) package refrigerated cheese tortellini
  • 4 cups chicken broth
  • 1 (10 oz) can cream of chicken soup
  • 1 (8 oz) package cream cheese, softened
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon Italian seasoning
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 1 cup grated Parmesan cheese
  • 2 cups fresh spinach, chopped

Instructions

  1. Layer the chicken breasts at the bottom of your slow cooker. Pour in the chicken broth and add the cream of chicken soup. Sprinkle garlic powder, onion powder, Italian seasoning, salt, and black pepper over the top. Gently stir around the edges to combine without disturbing the chicken too much.
  2. Slow cook on low for 6–7 hours or high for 3–4 hours until the chicken is tender enough to shred easily.
  3. Shred the chicken and return it to the slow cooker. The broth will be rich and flavorful by now.
  4. Add cream cheese to the slow cooker and let it melt into the sauce. Then add the refrigerated cheese tortellini and cook on high for another 30–40 minutes until the tortellini is tender.
  5. Finish with chopped spinach and grated Parmesan cheese, cooking for an additional 5–10 minutes until the spinach wilts and the sauce thickens slightly.

Notes

  • For best results, shred the chicken while it is still warm.
  • This recipe can be easily doubled for larger gatherings.
