Key Ingredients for Turkey Rice Soup

Turkey Rice Soup is the ultimate comfort dish, perfect for those chilly evenings when you crave something warm and nourishing. The ingredients you choose play a crucial role in crafting that rich, hearty flavor that makes this soup irresistible. Here’s a closer look at what you’ll need:

  • Turkey: Using leftover turkey is a fantastic way to reduce waste while creating a flavorful base. If you don’t have leftovers, rotisserie turkey is an excellent substitute, offering that savory depth we crave.

  • Brown Rice: I prefer brown rice for its nutty flavor and chewy texture. It holds up well during cooking, absorbing all the delightful broth. If you’re short on time, white rice can work too, but keep an eye on the cooking duration.

  • Vegetables: A mix of diced carrots, celery, and onions adds layers of flavor and vibrant color. These mirepoix vegetables are essential for building the soup’s foundation.

  • Broth: For the best result, homemade turkey or chicken broth is ideal. It’s rich and full of character but opting for low-sodium store-bought broth is just fine too.

  • Herbs and Spices: Fresh or dried thyme, parsley, and a pinch of black pepper bring the soup to life. These herbs enhance the natural flavors without overwhelming them.

Each ingredient plays a vital role, transforming simple elements into a delightful Turkey Rice Soup that warms the soul.

Wholesome Ingredients

  • Turkey: Using leftover turkey is a game-changer in this recipe. Not only does it add depth and flavor, but it’s also a fantastic way to minimize food waste without sacrificing taste.

  • Rice: I recommend brown rice for its nutty flavor and added nutrients, but feel free to swap in any rice you prefer. It cooks perfectly in the soup, soaking up all those delicious flavors.

  • Vegetables: Carrots, celery, and onions come together to create a classic mirepoix that forms the backbone of this dish. Their natural sweetness and crunch balance the savory broth beautifully.

Cooking Tips and Notes for Turkey Rice Soup

Creating a hearty bowl of Turkey Rice Soup is not just about cooking; it’s about crafting a comforting meal that warms both body and soul. Whether you’re dealing with leftover turkey or simply seeking a nutritious dish, taking a few extra steps can elevate your soup from good to great.

Picking the Right Rice

While any type of rice can work in your Turkey Rice Soup, I recommend using long-grain rice, such as basmati or jasmine. These varieties maintain their texture well, making for a soup that feels more luxurious. If you’re short on time, instant brown rice is also a viable option.

Flavor Depth and Seasoning

Don’t skimp on seasoning! Adding a pinch of cayenne pepper or a splash of lemon juice right before serving can elevate the flavors significantly. Herbs like thyme or parsley add freshness, while a bay leaf simmered in the pot brings a subtle, aromatic backdrop.

A Note on Consistency

If you prefer a thicker Turkey Rice Soup, consider mashing a small portion of the cooked rice and stirring it back into the pot. Alternatively, adding a cornstarch slurry will thicken without changing the flavor profile.

Cooking Techniques

Using an Instant Pot not only speeds up the process but infuses your soup with deeper flavors. If going the stovetop route, remember that low and slow is key; this allows the vegetables to release their natural sweetness and the turkey to impart its rich flavor.

Storage Tips

This soup is great for meal prep! Store leftovers in an airtight container in the fridge for up to three days. When reheating, add a splash of water or broth to keep it from becoming too thick.

Enjoy your Turkey Rice Soup, a dish that’s not just food, but a chance to recall the warmth of shared moments!

Description

A hearty turkey rice soup made with ground turkey, vegetables, and seasonings, perfect for a comforting meal.

Ingredients

Scale
  • 1 1/2 lbs. ground turkey
  • 1 T + 2 tsp. olive oil
  • 1 cup finely diced onion
  • 1 cup finely diced celery
  • 2 cups finely chopped cabbage
  • 1 T minced garlic
  • 2 tsp. Spike Seasoning (see notes)
  • 2 tsp. Poultry Seasoning
  • 8 cups chicken broth (see notes)
  • 2 T Turkey Soup Base (see notes)
  • 2 cups frozen cauliflower rice (see notes)
  • 2 T balsamic vinegar

Instructions

  1. Heat oil in the Instant Pot on SAUTE, HIGH.
  2. Add the ground turkey and cook until the turkey is nicely browned, breaking turkey apart and scraping the bottom a few times with a plastic turner. This will take about 10 minutes.
  3. Season the cooked turkey with a little salt and fresh-ground black pepper.
  4. While turkey cooks chop the onion, chop the celery, and slice and coarsely chop the cabbage.
  5. Remove turkey to a bowl, and heat a few teaspoons more olive oil in the Instant Pot.
  6. Add onion, celery, cabbage, garlic, Spike Seasoning or other all-purpose seasoning blend, and Poultry Seasoning and cook five minutes, stirring a few times.
  7. Add the cooked turkey back into the pot and stir to combine with vegetables.
  8. Add the chicken broth, plus 2 T Turkey Soup Base. (Or if you’re lucky enough to have some Homemade Turkey Stock, by all means use that!)
  9. Set Instant Pot to MANUAL, HIGH, 10 minutes cooking time.
  10. While soup cooks, take the cauliflower rice out of the freezer and break it apart, or if you have a big package measure out 2 cups frozen cauliflower rice.
  11. When time is up use NATURAL RELEASE for ten minutes; then release the rest of the pressure.
  12. Add cauliflower rice to the pot. (You can use 1 1/2 cup cooked wild rice or 1 1/2 cups cooked long-grain rice if you don’t want to use cauliflower rice.)
  13. If you’re making the soup with leftover turkey, add that now.
  14. Set Instant Pot to SAUTE, MEDIUM, and cook the soup about 10 minutes or until the cauliflower rice seems done.
  15. Check for seasoning and add a little more salt and fresh ground black pepper if you want it.
  16. Stir in the balsamic vinegar and serve Turkey Rice Soup hot, with coarsely-grated Parmesan cheese to add at the table if desired.
  17. To make this ground turkey soup on the stove, use the directions in the original recipe.
